Harvesting Food Through History with a unique Shepherding Program is a culinary workshop in the Puglia region of southern Italy offered by Messors through GoVoluntouring. Participants start by learning the origins and methods of Mediterranean cooking. Workshop topics include traditional cheese-making and butchery, how to make a clay oven, pasta making, olive oil exploration, and slow cooking shepherd style. Following the culinary week, participants can choose to explore the life of a shepherd from dawn to dusk, including milking the sheep and making fresh cheese. Guests stay at Masseria la Selva, an 18th century hunting lodge in the hills near Altamura, a town famous for its bread. For details see Culinary and Shepherding Program on the GoVoluntouring site.
